A late, late breakfast; left overs (mostly)

There is no rule saying ‘though shalt have cereal and fruit for breakfast’. I often enjoy eating up left overs from the previous evening’s dinner. In this case I had some tomato and mozzarella salad and some smoked salmon with avocado mixture in the fridge. I filled an omelette with the salmon mix and laid the tomato salad on some fresh shredded lettice. Quick, easy, tasty and as ever with low-carb food it kept me full for hours. Just spotted a lovely beetroot had snuck onto the plate too.
