I keep chickens and so I have a plentiful supply of lovely eggs. I often have eggs in some form or other for breakfast…. I should clarify that – the meal I break-my-fast with. It is rare that I would sit down for my breakfast before noon; I like to prolong my overnight fast long enough to get into fat-burning mode as I sleep. And, for fat-burning read lose weight. This gorgeous offering began with onion, mushrooms and butter fried, with some chorizo lardons chucked in before pouring in the egg mixture. I finished it off in the grill to melt a garnish of cheddar cheese on top. It tasted fab and kept me full and hunger-pang-free for hours. Result!
